Exotic & Delicacies

On occasions when available and in season delicacies cuisines of wild game and fish are promoted such as: Wild ostrich, moose, elk, caribou, oxen, buffalo, mountain goat, doll sheep, boar, quail, duck, pheasant, and fish meats.
Menu selections are Based on that week’s or month’s theme. Special request menus are available only by special order and 2-week advanced bookings.

Appetizer
FOUR-CHESE BISCOTTO
Chef Vinni’s signature - four raw select garlic, herb cheese blend served on whole grain crackers and Italian bread with an olive oil, and cracked pepper drizzle.
Entrée
FILLET MIGNON
Three-inch-thick 1.5 pound of premium aged and pre-marinated for 12-hours in a BBQ, wine, herb and spices marinade, and grilled to perfection.
Sides
Sautéed garlic spinach, red onions in rich buttery olive oil. Three-cheese garlic mashed potatoes and grilled asparagus.
Desert
Old fashion American handcrafted and homemade Blueberry pie with vanilla ice cream.

Appetizer
Multi-grain thin rusk topped with Alaskan raw salmon on a bed of hummus, goat cheese, and roasted garlic blend and garnished.
Entrée
WILD SALMON OR HALIBUT
Wild Alaskan Salmon or Halibut smothered in a rich buttery, garlic, olive oil base with select fresh herbs and spices, then baked in the oven with a risotto rise combination in its own juices and topped with lemon grills.
Sides
A select blend of multiple rice and seeds baked with the fish in its own drippings to the perfect consistency and combination of flavors for superb risotto. Sautéed summer select yellow and green buttery squash with hint of sprouts.
Desert
Homemade and hand made fresh southern American Apple Pie with a hint of cinnamon and peach served with the ice cream of the week.

Latin South of the Border

Appetizer
Chef Vinni’s signature famous southern Californian award-winning guacamole and award winning tangy, sweet, and spicy signature Salsa Picante made with fresh vine red ripe Romas, sweet basil, cilantro, roasted jalapenos, garlic, sweet mango, colorful bell peppers, red onions, lime juice, and pink Himalayan sea salt.
Entrée
A combination of shrimp, fish and beef tacos marinated and grilled to perfections topped with select veggie and Vinni's secret sauce.
Sides
Authentic Southern Spanish fried rice, refried spicy pinto or black beans topped with select cheese and a tomato, cucumber, beat, and red onion salad marinated in Vinni's signature tangy lime and vinaigrette dressing.
Desert
South American Flan creamy custard soufflé with a hint of cinnamon.

ASIAN HAPPY SEAFOOD DELIGHT

Appetizer
Chef Vinni’s award winning 7-seafood cocktail. Grilled octopus, shrimp, abalone, prawns, clams, scallops, and oysters. Marinated for 24 hours and served up in a schooner with select tangy veggies, herbs, Vinni's special sauce, and garnished with basil, cilantro, and pineapple. 
Friendly warning - this is practically a meal in itself.
Entrée
Chef Vinni’s Signature Poke and Sashimi entrée made with raw blue marlin, Alaskan Salmon, red tuna and tossed in a sweet tangy sauce blended in toasted sesame seed oil base then mixed with assorted veggies, select tropical fruits, seeds, nuts, and colorful dragon fruit presentation.
Sides
Steamed Thai sticky rice garnished with dried seaweed, herbs and sesame seeds.

Mediterranean Madness

A combination of select cuisines that stretch from the far French Alps across the northern Mediterranean lands to southern seashores of Morocco.
Appetizer
22 ingredients lentil creamy spicy soup: A combination of lentils, peas, celery, carrots, onions, garlic and Mediterranean herbs and spices blended into a creamy broth. Delightfully nourishing and tasty to give your pallet a combinationally colorful tasty experience of the 22 countries of the Mediterranean.
Entrée
RACK OF LAMB
Australian free rage gracing lamb---rack of lamb carefully seasoned with fresh herbs, (rosemary, parsley, bay leaves, and crushed fresh garlic) rubbed with select Mediterranean spices with a white wine base that is marinated and aged for 36-hours, then grilled to perfection.
Sides
French style buttery garlic mashed potatoes with a select three cheese blend (Parmesan, asiago, and Romano cheese.) Sautéed spinach with red onions and mushrooms and grilled buttery asparagus.

Sicilian spaghetti and stuffed baked Rigatoni
2-inch large hand rolled seasoned moist meatballs served on a bed of gluten free spaghetti noodles and drowned in a rich slow simmered veggie loaded marinara sauce. Pasta 2- Stuffed baked rigatoni: Seasoned ground lamb with Mediterranean spices then stuffed into large rigatoni noodles, smothered in a marinara sauce, then baked to perfection and topped with three Italian premium aged cheeses.
Sides
Italian salad. Fried Eggplant in a seasoned egg batter.
Desert
Rich chocolate cheesecake served on a sweet wafer and garnished with graded dark chocolate and straw berry presentations.

Glazed and grilled Sea Bass, Salmon and tiger shrimp. This assortment of fish and shrimp is seasoned with a base blend glaze then flash seared on the grill for that charred grilled flavor with a moist center.
Sides
Asian stir fry of mixed veggies of the orient in a light sweet oyster sauce - Bok choy, Chinese cabbage, carrots, spouts, Chinese peas, nuts, dried cranberries, garlic, mushrooms, and more. Steamed rice.
Desert
Green Tea, chai tea and Black Asian tea blend ice cream on a ritzy wafer with dark chocolate and coconut cream milk drizzle garnished with fruit.

Lentil creamy spicy soup: A combination of lentils, peas, celery, carrots, onions, garlic and east Indian herbs and spices blended into a creamy broth. Served with garlic Naan.
Entrée
Tandoori Chicken or Beef. Marinated meat in a traditional east Indian style topped with fresh herbs and onions.
Sides
Masala and Indian steamed rice. Veggie Masala is a combination of select veggies that are seasoned with Mediterranean herbs and spices then stewed to perfection in a tomato base.
Desert
Rice pudding. Traditional East Indian cold rice pudding with essence of cinnamon and hints of raisins, dates and seeds.
